One of the first chefs in America to gain national attention for creatively combining East-West flavors with locally sourced ingredients and fresh California Coast seafood, Dale shares tales and flavors spanning from his roots in Buffalo, New York to his immersion at a Buddhist culinary retreat in Japan, to his coming-of-age experience at a hot spot grill in Boston, Mass. In 1978, he opened the original Wolfdale's at Lake Tahoe, serving imaginative food in a simple, mountain-sprung atmosphere. The book provides a visual timeline with stunning photography and nearly 70 unusual recipes.
